This refreshing recipe is perfect for harvest season! With garden fresh cukes and tomatoes, this will be the salsa of the summer.
Cucumber Salsa
Sauté
- 1 T Olive Oil
- 1 T Fresh Minced Garlic
- 1 T Fresh Grated Ginger
Sauté until fragrant, then add:
- 1 ½ T Sugar
- ¼ C Sweet White Wine
Cook until caramelized, then add:
- ¼ C Chili Sauce
- 1 T Chili Oil
Allow to cool.
Combine
- 4 Cucumbers (seeded & diced)
- 4 Roma Tomatoes (seeded & diced)
- ½ Yellow Pepper (diced)
- ½ Red Onion (diced)
- ½ Can Black Beans (optional)
- Fresh cilantro to taste
After sauce is cooled, add to vegetables and combine until well incorporated. Chill in the refrigerator for 2-3 hours to allow flavors to bloom.
