Eggnog Cheesecake Bars


  • 12 graham crackers
  • 3 Tbsp sugar
  • 4 Tbsp in salted butter
  • 1 lb cream cheese
  • 3/4 c. sugar
  • 2 large eggs
  • 1 egg yolk
  • 3/4 c. eggnog
  • 1 1/2 Tbsp cornstarch
  • 1 1/2 Tbsp brandy
  • 1 tsp vanilla
  • 1/2 tsp freshly grated nutmeg


Heat oven to 350 degrees.

Coat a 9″ square cooking pan with cooking spray.
Stir together crackers, sugar and butter, press into bottom of pan. Bake until crust is just brown, 12-15 minutes.

Beat cream cheese until fluffy, about 2 minutes. Add remaining ingredients and beat until smooth. Set in a roasting pan and add enough hot water to come halfway up the sides of the baking pan.

Bake until just set, 40-45 minutes.

Take out of water bath and let cool 30 min., then refrigerate for at least 3 hours.
